Everything? Well, that could take ages!
Firstly, lets start off with the Revenge of the Sith novel by Matthew Stover, which gives great insight into why Anakin becomes Vader in the first place. It fills in gaps created by the movie and actually makes you feel for him. Amazon

Dark Lord: The Rise of Darth Vader (Novel) apparently deals with Vader immediately after Ep III. I haven't read it yet, though it's been sitting on my shelf for a few months now. Amazon

Comics:

  • Darth Vader and the Ghost Prison: Vader must stop a coup against the Emperor. In doing so, he travels to the Jedi Temple and a Jedi prison from the Clone Wars. Amazon
  • Darth Vader and the Lost Command: Vader has to find out what happened to a unit while also thwarting the actions of Moff Tarkin's son. Amazon
  • Darth Vader and the Ninth Assassin: A mysterious assassin is hired to kill Vader. Amazon

  • Obviously, The Force Unleashed and its sequel should be mentioned here. They also exist as novels (I've linked to TFU multimedia rather than each one individually). While the main character is Starkiller, Darth Vader plays a huge role. It provides a glimpse into his frustrations with the Emperor and his plans to ultimately overthrow him.
  • Empire at War: A real-time strategy game for the PC. It takes place just before and during the events of A New Hope. Vader appears as a unit and has a major role in the Empire campaign.

There is a small snippet featuring Omega squad in one of the Darth Vader books, as well. It now exists under "Legends" but the original title was Dark Lord: The Rise of Darth Vader. It's since had its title changed to reflect that it belongs with Legends canon, but coming back to my original point, I believe Omega squad kind of cameos in the beginning of the book.
