I cut my fantasy teeth on David Eddings' Belgariad series. I don't know if I would recommend it though. The characters are decent, but they are so powerful it is hard to question that they would fail.

A Song of Ice and Fire - George R R Martin is a very good series, but I would caveat it with 2 conditions. First, it is not finished. If you blaze through it, you need to know that there are 2 more books coming. Second, and this is just as important, it is a political drama set in a fantasy world. It is a big step up from your traditional good vs evil fantasy novels, and it is not for everyone.

Dennis L. McKiernan's Mithgar series is good on the whole with a few books being outstanding and few that are just so-so. The books can be read in any order and are fairly independent although there are a few characters that span the entire series. I would recommend either Dragondoom or The Eye of the Hunter

The Harry Potter books are a bit outside what you are describing, but are very good.
