Some of the books in the Ranger's Apprentice series by John Flanagan (middle grade/young adult) are set in fantasy Scandinavia - The Icebound Land and The Battle for Skandia (books 3&4) for certain.
About a quarter of Elske by Cynthia Voigt (YA fantasy) takes place in the lands of brutal Viking-like antagonists.
Would also second Prince of Fools by Mark Lawrence - a quest by a cowardly prince and Viking lord in post-apocalyptic fantasy Scandinavia.
Reading Rainbow was one of my favorite shows as a kid. I now watch it with my kids on Netflix!
