What fold are you using? The folds that bring the cup to a real point (e.g. 7-fold, half diamond fold, labia fold, punch down fold) should be OK to insert with one hand, as there's no real need to hold the labia open. I don't usually use my second hand at all with those folds. Punch down is probably the easiest to manage with one hand.
If it's hard to deal with insertion while seated you might be more comfortable lying on a towel on the bathroom floor, or squatting in the shower, or propping one leg up on the edge of your bathtub. Any position where you feel comfortable and are able to relax your muscles is worth trying.
There are a couple of cups with applicators now - the Amy Cup and the Enna Cup - if that's something you would find useful. The applicator design of the Amy is very simple, just a tube that the cup is pulled into, and I suspect you could do something similar with other cups if you could find a tube of the right size. There's also one (without an applicator) designed for easier removal called the Flex Cup , which should be available soon.
I'm really looking forward to seeing more designs that allow for mobility issues, as a fair number of people do have trouble with the traditional cup design.
