Try getting this book from a library: Fiddler on the Move. You might be able to read some of it on Google Books. I collect klezmer sheet music books as much as I can and I think it might be one of the only ones I've encountered that examines tunes in such a specific way, transcribing the way it's played by a few different artists, etc.

Most klezmer sheet music is transcribed from a classic recording but not necessarily in an extremely precise way. For example the artist might play the tune differently each time through but the part will only be transcribed once, just like in any tunebook for traditional music.

For something more exotic you could try ordering this book "Kale Bazetsns and Doinas: Transcribed and edited by Cookie Segelstein and Joshua Horowitz". I bought their other book years ago but not this one, but they are some of the top musicologists of klezmer so I expect they would know what they are doing. These aren't dance tunes but they are listening pieces.

A more generic answer is The Compleat Klezmer which is one of the most-used klezmer fakebooks of all times. The tunes are mostly transcribed from classic great artists such as Naftule Brandwein or Dave Tarras. But like I said above they are not transcribed in crazy detail, it's just a fakebook showing the general style of playing through the tune once.
