Whenever a creationist friend or coworker tries to sell me the whole 'man lived with dinosaurs' line using drawings and sculptures of dragons etc. as evidence, I lend them Fossil Legends of the First Americans, one of the most interesting mythology discussions I've read.
The main aim of the book is to demonstrate how humans made sense of fossils before evolutionary theory developed, but it also does a very fine job showing that the myths of North America were based on fossils and not living creatures.
You might also want to check out Fossil Legends of the First Americans to get an understanding of what various Native American tribes thought about fossils.
