u/FrequentInspector - carrying an 80D plus a BMPCC 4K rig would be a lot of hassle for a single shooter, in my view.
That said, if you want to carry a single camera for photography and video, I recommend you save yourself $600 and get a $1399 Fuji X-T3 instead of the $1998 A7 III.
The X-T3 is a better video camera than the 8-bit A7 III, with 4K/60p slow motion and 10-bit 4:2:2 output (10-bit 4:2:0 internal) - plus it's a big upgrade over your 80D for photography.

You can get a $172 Viltrox EF-FX1 adapter to mount your Canon glass until you decide which Fuji X lenses you want to buy.
The Fuji X-T3 is probably the best hybrid still/video camera in this price class.
