For the avoidance of doubt, I am disputing your assertions that “Hand clicking is using a clicker press to utilize a patterned steel die”, and “Hand cutting is using a blade and meticulously cutting out the traced pattern”.

John Lobb uses a blade to cut out traced patterns, and does not use a press. They refer to this as clicking

In Edward Green’s catalog, they admittedly use the phrase “hand-cut”, but also refer to it as clicking. No presses anywhere here

Lazslo Vass’ book contains extensive sections on clicking, and refers to it as such. Many people here, including me, own that book and can probably attest to this. They do not use presses.

The knife makes a signature "click" noise, and thusly the process is called clicking. Really only higher end shoemakers still actually click. Most machine made shoes like say for example Alden, use a pneumatic press and dyes and they place a bunch of dyes over the hide and a worker uses the press and dyes to cut out to the components of the upper and off to the closers they go.

It kind of looks like your typical coffee table book, but it's amazing. Super well-researched information on nearly every aspect of shoes and shoemaking, with beautiful pictures.

AOTD: Cost-wise, probably too much. My focus has been on shoes but I'll sometimes purchase some more expensive pieces of clothing.

GD: Found Handmade Shoes for Men at Half Price Books so I went ahead and bought it. Should be a fun reader for those easy days! Also just received the Viberg x Notre Coffee Pack boots that I ordered from the 25% off sale. The cxl is beautiful and the finishing is on point except for a little bit of weird stitching connecting the tongue to the vamp. They fill the brown boot niche of my wardrobe but I'm not sure if they're special enough (to me) to keep so I'll be consulting the SO in the next few days. My body is telling me yes but my brain is telling me to save some $$$.
