I'm not the OP, I'm not even a meat dept manager, but its hard to beat J.A. Henckels knives for the money, I think. I like their full-tang pieces, like these, but they've got stamped items that are a lot cheaper and still very good quality.
The most important thing about keeping good steak knives it to take care of them. I don't care what the instructions say, do not put them in the dishwasher. Hand wash, dry immediately, and store in a good wooden rack.
