In all honesty, you probably won't get this level of quality with a point a shoot. But, a nice entry level prosumer DSLR like a Nikon D90 and a good fast prime lens like their 50mm 1.4 will get you on your way. Also, Adobe Lightroom is fantastic software for maintaining and cleaning up your images. I have no doubt these images were post processed in some way. There is no problem with that anyway. It's simply removing the imperfections the camera makes in the image.
That being said, a point and shoot will take some really nice photographs.

He takes all the pictures in the book with a nice point and shoot and they are fantastic.
All the gear in the world won't help you if you don't understand composition and lighting. You will end up with crisp, clear, boring and shit photographs.
