this is the problem with most bluetooth headphones, when you are using just the speaker without the mic the headphones are running in stereo but when you switch over to a call or mono headset the headphones have to stream the audio for the speaker and from mic to PC over the same connection. I dont know why quality goes down, possibly because of data transfer limitation of Bluetooth. The best way to get around this problem would be either to use a aux cable with a inline mic and connect it to your headphones or use your PC's inbuilt mic while only using you headphones for audio.
