I highly recommend Introduction to Game Development. It's very comprehensive on all of the stages of development. It doesn't go into as much code detail as other books, but it's a very good all-around dev book.
It's edited by Steve Rabin, who did the AI Game Programming Wisdom books.
(Full disclosure: Steve's a friend of mine. But seriously, his book is great.)
