I have similar hair, with 2b/2c high porosity, fine, but super thick. I had a similar issue with my waves when I first started CG. I now use two gels in my hair in the following ways:

(1) First gel is JessieCurl Rockin' Ringlets, applied in the shower when my hair is soaking wet. I get the best results when I apply it using praying hands, then because my hair has a tendency to get flat at the roots, I like to rake it, then scrunch. If anything looks a little on the less defined side, I will gently twist those pieces for the definition.

(2) Then I only plop to about 10-15 minutes.

(3) 2nd gel is Curly Magic applied only a little bit via praying hands again. I then twist the bits that still look flat.

I find that I can't get lasting curl definition without any diffusing, so once I've applied all of my products, I diffuse my hair for 10-15 minutes and then air dry the rest of the way. You would think that by using two types of gel my hair would end up super hard and crunchy, but by using two different holds of gel, it actually helps the curl last for so much longer and is super soft to the touch.

A little goes a long with these products, too. I go through them about once every 3 months and my hair is halfway down my back. :)
