So sorry guys! Posted and went to sleep.

62.8°C for 45 minutes. Eggs were 700g and were in room temperature. I made 4 at a go, 2 for me and 2 for SO. I'm guessing size and number of eggs will make a difference.

To be honest, I find that it's sometimes easier to make eggs like these using the old school way back when I was in Malaysia. Cooks up to 4 eggs at one time. All you do is put the eggs in and pour hot water in, let it drip slowly into the container below and you're done!

Edit: Forgot to mention that I also smoked these bad boys with a smoking gun. Works well. Other thoughts are maybe drizzle some pesto over instead of smoking it.

Too bad - I guess a sous vide would be out on that basis. Others had great suggestions like doing a weekly meal prep at nearby grill (weather could be a constraint). University dorms or maybe a nearby park or housing complex could have something you could frequent. There may be decent ZC or at least low carb/keto options thru campus dining anyway.

Well I had a few other random thoughts as I considered how to best deal with your challenge.

  1. Store bought thinly sliced roast beef from the deli area? Should be able to find a good product if you look around and try to negotiate volume pricing. Likely to be fairly lean...so you'll need to consider that.
  2. Here's the keywords to find a microwave steamed egg (korean style) recipe you may like, I used to eat it growing up: https://www.youtube.com/results?search_query=microwave+gyeran+jjim, japanese chawanmushi is somewhat similar and gives you more options to pick ZC friendly seasoning. Invest in a good quality fish sauce (ingredients = anchovies) or bonito dashi powder I'd suggest if you want to put something like this in your rotation.
  3. Of course there are lots of gadgets to help make your microwave more functional, especially for egg cooking but also bacon, assuming you tolerate it (although can be pricy, pork belly at an asian market is often cheaper).
  4. You could pick up one of these or probably devise your own. https://www.amazon.com/Half-Boiled-Egg-Maker-Traditional/dp/B07DCDC32Y Easy enough to boil water in the microwave, just be careful to take precautions against superheating it.
  5. It's a bit of a meme these years, but there are probably some good online microwave cooking guides around that may be helpful. https://www.microwavecookingforone.com/MicrowaveTips/
  6. I guess old school microwave browning equipment is similar to those disposable heating sleeves for hot pockets and microwave pizza. I did a quick search on Amazon and you can find such products, although they seem a bit pricy.
  7. Organ meat probably doesn't turn out well in any microwave - canned cod livers are good though.
  8. Canned sardines are fairly inexpensive and can help cover you on the omega3s front.
  9. I don't think jerky is a reasonable long term option, but you can do some research online. There's a pdf describing how to do it with a lightbulb and a box, although I'm not too confident in the food safety of that.

    Good luck! I don't think the economic aspect will be the issue here.

We just call it the yellow half boiled egg maker, and it’s used in traditional coffee shops here. Found a listing on Amazon.
