Buy this and this for a better experience with this smoker. Masterbuilt will say they don't recommend using pellets in it but I've had zero issues over the past year and a half I've used it. Bonus is you can also cold smoke cheese and hard boiled eggs with it. Here's a photo of my set up when I first got it.

It increases the capacity so much and makes it easier to add chips. Not to mention you can turn just the smoke on for things like cheese or salmon. I’ve done salmon and it’s delicious.

I have this as one of my smokers. It's the one I fire up when I want to "set it and forget it".

I highly recommend the cold-smoker add on. It can be used for cold smoke for salmon or cheese, but it can also be used for hot smoke. You go from dealing with that little chip tube every half hour to having enough chips/smoke for about 6 hours.

You need to a special setup to provide smoke without heat, or with minimal heat. Some people use pellet trays such as this or this. You can also make something similar with tinfoil.

I have a Masterbuilt 30", so I bought the cold smoking attachment, and added a 3" dryer tube to separate it from the main unit (to prevent creosote from landing on whatever im smoking).

I personally started smoking on a Masterbuilt Electric Smoker ($150 to $180 at a Lowes Home Depot, Wal-Mart). You never have to worry about temps, they seal well, and its cheap to experiment with chips and recipes on. I eventually outgrew it after a couple of years and picked up a Pit Barrel Cooker, knowing more of what I actually wanted and would use. I kept my Masterbuilt and now use it for Jerky and light smokes, like fish and fajita meats...might want to check it out. That Masterbuilt put out some pretty kick-ass shoulders and ribs and it was frustration free for the most part.

This is the first smoker I've bought, and I've been quite happy with it - even though I mostly use others now (I like wood cunks). I got mine at Lowes for about the same price.

Do yourself a favor and get either an A-MAZE-N tube/tray or the Masterbuilt cold smoker attachment (my preference). The biggest advantage to something like this is that you won't have to go mess with the smoker every 30-45 minutes to add more pellets/dust/chips.

The reason I recommend the cold smoker attachment is because it'll smoke for 6 hours without refilling chamber, and you can use in while hot smoking. I wouldn't recommend using pellets in one though. Perhaps its the humidity where I live, but I've had pellets expand due to moisture while in the cold smoker stack, which clogs it up. Pellets are also usually not 100% of the wood you're looking for. Typically they're sold in the 40% range. With chips, you get more control over that.

I recently cold smoked about 20lbs of bacon on my MB30". The cold smoker attachment itself gets too hot (around 100F), but you can buy a few 3" HVAC tubes along with some hose clamps to get around that. I had 2 3' runs to bring the cold smoker add-on 6 feet away & was able to cold smoke at 80-90F all day here in Georgia, and of course even colder at night.

The other thing I'd recommend is getting yourself a wireless thermometer. The temperatures do vary +/- 20 degrees on the MB30" and the built in thermometer may seem practical, but who wants to babysit a mini fridge all day?

You won't get a smoke ring on your food, and barks can be challenging (you CAN get them on this smoker), but its still great for people with limited space or those just curious about getting their feet wet. I also recommend this over the cheap offset smokers because of better insulation and even temperatures.


FYI, Alton Brown's ceramic smoker rocks. Its a poor man's big green egg. I wouldn't use a hot plate in one though. That just seems like more trouble than its worth, along with introducing more leaks.

I got one about 3 months ago. Used it about 6 times, so far so good. My roommate owned a similar one with the glass front door, but I don't think it is worth the extra money. It doesn't hold a lot of wood chips so you have to keep loading it and can't leave it a long time. I bought the cold smoker attachment http://www.amazon.com/Masterbuilt-20070112-Smoking-Digital-Smokers/dp/B008DF6WWE and it is definitely worth it. I use it for cold smoking and also regular smoking just because it holds a lot more wood chips so I can let it go for a few hours without checking on it.

get an external heat probe. The one it comes with is just Meh. And THIS! Absolutely THIS! Changed the game for me. I used to load chips every 30 mins or so. Now its every few hours. Plus it gives the option to Cold Smoke. Made a Smoked Gouda last weekend that was incredible!
