Ah, actually I recently made tortilla soup for the first time and that worked perfectly for freezing. I bought some really good corn tortillas, and I slice a couple and baked them on the weekends. I microwave the soup base for my lunch, stir in the baked tortilla strips and let it sit for a few minutes to soften the tortilla, then add avocado and enjoy. Absolutely delicious, and really easy with the right prep.

Most of my soups are bean or lentil based vegetarian soup to keep them filling, inexpensive and add nutrition. I get a lot of recipes from this cookbook:

I keep them in small individual, stackable plastic containers that are about 2 cups (measuring cups). The night before, I run hot water over the plastic container and slide it into a lidded bowl, then I let that sit over the next 8 hours while I sleep and it's good to go in the morning. I just put it in my lunch bag and keep in the refrigerator at work until lunch, then I microwave it. I've been doing this for like 5 years, it works like a charm.
