Hmm, well you can never have enough hiking socks or sock liners. You could try making her a little custom first-aid kit. You could get her like a box of cliff bars or shot bloks. If she rock climbs you might be able to get her some piece of gear or like a grip trainer. You could get her this inflatable solar lamp. I got one as a gift and I use it all the time for camping. You could get her some microspikes if you hike anywhere there is snow.
Hammocks are a fun alternative to tents. Just bring a small tarp to hang diagonally as a rain fly. And a mosquito head net keeps the bugs off while you're sleeping.
