The biggest difference you'll see is an increase in stability, and smoother frame rates. You upgraded from decent MHz to what I typically recommend, as far as RAM goes (the 3200MHz, although some boards I just recommend 2666MHz too). Not sure about switching from MSI to Gigagbyte though, because an MSI brand motherboard will typically last you longer, and can even provide more options in terms of USB. The MSI MPG X570 Gaming PLUS is also a little bit cheaper, so you can put that $30 or $40 to something else you might want or need. ;)

The Gigabyte x570 has (for some odd reason) 4 USB 1.1/2.0 ports, which I don't fully understand the why... Why so many for such an old connection/port, if you will. The MSI MPG X570 Gaming PLUS Motherboard would've had everything you need and then some, with that USB-C port. If you're looking to plug 2 monitors in, that's what makes that USB-C port so great! They make USB-C to HDMI cables and adapters. :)
