The CPU is basically an i7 without the integrated graphics. The CPU is not designed for overclocking.
Motherboard has tons of features and supports SLI.
16GB RAM is plenty for the programs you listed.
1TB HDD for media and games.
120GB SSD for OS and main programs.
GTX 770 will max out any game and help in rendering processes.
Quality case with good cable management.
The high quality semi-modular power supply could deliver the power for another GTX 770.
Cheapest optical drive.
I usually recommend WIN8, but there is a good deal on WIN7 in Germany.

Because PCPartPicker sucks for Germany, I picked the items manually on Amazon and Alternate, so you could save some bucks if you do more research. I'm a German and I guess you are one too, so feel free to ask questions (in German).

Although you sacrifice a window, the Elite version of this case is $50 on amazon. It comes with an extra 120 mm fan and tool less hard drive installation (with some other minor differences).

You could probably go even cheaper than that: the games you list have low requirements and could run off of an AMD APU processor, but you might not get ultra gfx. Which I assume is part of the point of modding these games, so I put a newish GPU in the build. LMK what you think!

The NZXT Source 340 is popular (also found in white).

Also the more expensive Fractal Design Define R5 (also found in Titanium Grey and white).

Many enjoy the cheaper NZXT Source 210 (also found in white) and the bit more expensive NZXT Source 210 Elite (also found in white).

And of course NZXT H440 (also found in other colors and the Razer edition).

Also Corsair have made some nice cases. Especially their Obsidian series.

In the end it depends on your budget and I have just linked some of the most popular which should be for every budget!

Also, you might have a look at the NZXT Source 210 Elite on sale over at Amazon right now - it has superior cooling as-is and a higher potential for cooling (the top-mounted PSU location in the Apex is not ideal). If you require lots of front-panel ports, though, that NZXT isn't for you.

To start, you're grabbing an unlocked CPU with a mobo that does not support overclocking.

Next, you should swap the GPU to a 6870 since it costs less and outpaces the GTX 560, drop the PSU to 600-650w, swap the case to something like the NZXT Source 210 Elite (in white or HAF 912 (which are nicer cases and $30 cheaper), and grab the OEM copy of W7 Home Premium 64 bit. Those should save you about $140, plenty enough to grab a much better mobo that actually allows you to overclock.

Just from experience you always want more drives. So even if you don't need/want the space for more drives today you probably will in the future. I can highly recommend getting a [NZXT 210 Elite](NZXT Source 210 ELITE Midtower Case with 3.0 USB - Black https://www.amazon.com/dp/B005869J4O/ref=cm_sw_r_cp_api_3cWoybVHYCKJ3) its cheaper than your case and holds 8 drives to start and with a 3-to-4 "converter" you can hold 12 drives in it. Yes it's a larger case (normal sized) but if I were you I'd go with that instead.

That's just a terrible case. It has two fan slots, one on the back in 90mm and one on the side in 80mm. If it's not breathing at all, then that case is just turning in to a convection oven. And the heat sink isn't bad, but it's not really much of an upgrade over the stock cooler.

You need to get more airflow, stat. See if that drops your temperatures. So that will require a new case. I'm assuming you're in the UK. So get this case. And you should be good to go. If it's too big let me know.
