Check out Peter Reinhart's Whole Grain Breads.

A lot of great information on how to make really good whole grain yeast breads. Most of the recipes require two days to complete, but they're worth it, IMHO.

Interesting notion that bakers have responded to the GF/low-carb trend by making better bread. I'd like to check out his whole grain breads book. The recipes look great.

I'd like to see Reinhart or any master level baker write a book for GF breads. Gluten free breads are something of a pain in the ass. If you can knead the dough, there's not enough moisture; if there's enough moisture, it's a batter, not a dough. And the frigging eggs. I don't make gluten free breads for myself, but apparently it's what people want to eat now...
