Pimsleur Hindi is a nice place to start. It's a very aural way of learning and while it does include some reading, it can be done without it. The library system in my state had it.

Rupert Snell's books on learning Hindi, such as this one are an excellent choice thereafter. It starts off with both devanagari and roman script, and after a few chapters eliminates the roman.

I think it's possible to learn Hindi without reading devanagari but it's hard. I personally hit a level I couldn't go beyond until I really got devanagari down. The language can be spelled correctly with a modified roman alphabet but it doesn't work right somehow. If you were studying Hindi in university you'd learn both devanagari and Urdu scripts.

My suggestion is that you get a little kids book for learning Hindi letters, one where it shows you how to create the characters by tracing them over and over again. Once I worked with that book for a couple months I could read devanagari easily and things became a lot easier. This is an example from Amazon india. They might send to the US if you're not in India, otherwise I'm in India now and could send a book in the post if you want.
