Each 27 inch monitor is 23.5 inches wide without bezels. Being generous, assume a quarter inch bezel per side, that's 2 feet wide for each monitor.

So your center monitor being 2 feet wide will leave a foot and a half on each side. That puts your monitors at a 41.5 degree angle inwards from the rear horizontal desk edge, if you don't want them overhanging the sides. That's really tight.

May I suggest a single 27 and a 34 inch ultrawide? That would save you a little desk space and give you very similar screen area. They would be the same screen height. Probably cheaper too.

Otherwise I'd say go with 24's.

5ft by 2ft deep desks are really easy to come by. 3 feet tall is quite tall. Most desks are about 30 inches instead of 36, so that will be your main thing to look for. Try looking at breakfast bar units perhaps for that sort of height. A nice butcherblock top would be sturdy for no vibration, durability, and the ability to arm mount monitors. Alternatively a "counter height table" would work. Heres a nice 3x5 one thats 3 feet tall.
