I wouldn't go with anything at the $500 price range. The low light performance at that price is awful.

For around $1000, you can get a stabilizer mirrorless camera like a Panasonic G85 and shoot at 4K.

My top choice, however, would be a Sony camera. Specifically the a6500. Sony has a reputation for making fantastic low light cameras, and you should make that your top priority for the kind of shots you want to get. With this camera, you'll get the option to record at 4K, but you can also get some 1080p 120 frame per second shots and slow them down in post, which will look really good for the video you're trying to achieve. The one problem with other cameras for this is you need to use a faster shutter speed for slow motion shooting, which means you need an even better low-light camera.

As for the colors, they'll both perform relatively well for this. A big part of that will be setting up the scene, potentially using gels over your light to modify the colors. Then use whatever editing software you have after to do color grading and make the colors pop better.

u/TryHardKurd - you'd be much better off with the A6500 for its internal stabilization and reduced susceptibility to overheating.
