Really depends on what you're doing. I sometimes kit out these screw drivers that can hold a bunch of different tips and get every allen size/phillips/flathead/torx and put it in there. It's somewhat annoying though because the tips are easy to lose and I don't want to keep replacing them all the time because it's a hassle.

Typically though, I carry a standard hex set, metric hex set, torx set in addition to my multi tip screwdriver. I also keep T-handled hex sets on a cart.
Once your camera is built however, you really only need a couple sizes to adjust anything.
3/16th, 1/8th, 3/8th, 3mm are pretty common. RED's have some things that are torx like the lens mount, and some of their adapters/add ons are torx. Everything that attaches to my camera is via 3/16 bolt, 1/8th bolt (top handle), flathead (Cinelock), or if I have to bolt the camera to something, it's usually a 3/8th. I also keep a little organizer bin with all of these bolts of various sizes, cinelock bits, v lock bits, ect.
