This is from the Star Wars Complete Cross-Sections book which contains many many more of these across all the episodes. Great book I highly recommend it.

(For the lazy, this is the more complete version. 32 pages vs 152 pages. Your choice)
There's an old-fashioned website!

I'd pay some real bucks for a "cutaway"/cross section art book detailing designs of all the EVE ships.
Something along the lines of this: http://www.amazon.com/Star-Wars-Complete-Cross-Sections-Spacecraft/dp/0756627044
DK published several of these type of books. I plan on buying them for my nephew when he's a bit older and less of a drooler.
Here's this to get you started.
They actually released two complete collections all the books. One for the vehicles, and another for the the locations. There was also a later one for the Clone Wars TV show.
I'm thinking about buying like $300 dollars worth of coffee table books.
Initial picks are looking like -

I don't think this series was meant to pose ethical dilemmas or vast political intrigues. It's a pretty light-hearted kids' book that involves some extremely cool machines/beasties- seriously, the art alone made me want to buy it (I'm the sort of guy who buys star wars ship schematics books). The lack of truly epic battles might be kinda disappointing, but it makes sense since neither of the main chars is really a fighter. The leviathan's original goal was a diplomatic mission to istanbul, then a diplomatic mission to japan, then a diplomatic mission to ny. For me, the battle for the tesla cannon in istanbul/sinking of the breslau and goeben and the siege of goliath filled the epic fighting quota.
When all is said and done, it's still a troperiffic and pretty simple love story set in an cool (illustrated :) world. There's good character development, the machines/beasties are fun to look at/read about, and bovril simply rocks. Did I mention the art is also pretty good?
I think you may want this one.

I think the original source is probably in this book:

It's this one. I've had it for years and it's really amazing. Has almost all of the vehicles and spaceships from the movies.

I believe this encompasses most if not all the space craft of Star Wars.
