I'm going to be honest with you....I just bought the one I thought was the prettiest and that also had two cupholders. Putting so much thought into height and weight limits and different conversions as the kid gets older was stressing me out.
Decided on this one: Evenflo carseat. I really like it for our Pontiac Vibe, which is a small crossover, not quite an SUV. If you're both tall you might not be able to put your seats back regardless of which carseat you get, but perhaps I am wrong there.
