There are some post-T2 novels if you're looking to scratch that itch, both are trilogies.

The series by S.M Stirling is set post the events of T2 where the Connors are living in South America after the events of T2 cuts back and forth between the future and present narratives.

The Russel Blackford series splits in two concurrent narratives, one where the Connors fled to South America instead of destroying Cyberdyne, which leads to Judgment Day and tells how the events of that unfold, the second follows T2 where they do destroy it. This one spends a significantly longer time on what the post Judgment Day world looks like.

The book I read (probably a decade ago) was T2: Infiltrator. I thought it was a great continuation to the Terminator 2 storyline. It was one of the few novels I could really get into as a young adult.

You'll have to read the book (or ebook) to see the exact story, I lost my hardcover long ago on a family trip. :-/
