Pretty much everything by Mark Lawrence.
Warhammer 40k books basically personify Grimdark. The Horus Heresy ones are a good laugh (or anything by Dan Abnett).
Michael Manning has an interesting fantasy series, Mageborn, which has a prequel series, The Embers of Illeniel that deals with some very dark content.
A.J. Smith's The Long War series is definitely worth a read, some really interesting characters and concepts. Well written combat too.
And lastly, a shameless self plug for mine, The Great Hearts. It features cannibalism, monsters, epic sword fights, magic and a gigantic panther.
