This book is an accessible and fun read on the subject. This book is geared more towards academics, but is equally fascinating. Both are more generally about the history of anatomy; in my original post, the book links are more tailored towards the source of specimens and to "body snatching" practices.

Flushed is a really cool and fun history of how civilization wouldn’t be possible without the plumber.

Knife Man is a history of body snatchers and the birth of modern surgery.

Edit: Added link. I'm not particularly into surgery or biology, but I found this to be a fascinating glimpse into the history of something we find commonplace in our day. It's not a very long read and well worth it.
