For Photoshop, I recommend the following:
Perfect Digital Photography by Jay Dickman. Book is divided into two sections. Photography and post-processing.

Scott Kelby's 7 Point System for Photoshop CS3. This one really opened my eyes to some other techniques. Easy to follow with 20+ "lessons". You download the images online and then go step by step with the book.

Layers: The Complete Guide to Photoshop's Most Powerful Feature by Matt Kloskowski. Somewhat similar to Kelby's 7 Point book, but the lessons are really short. More or less demonstrates different techniques.

The Photoshop Channels Book by Scott Kelby. Again, follows the same format the 7 point book, but like the Levels book, the lessons are short demonstrations.
