The most realistic depiction I've come across of what it's really like being a consultant is found in the book The Secrets of Consulting
Most books on consulting tend to glamorize, and make it seem like consulting is an easy way to make big bucks. They're trying to sell you a fairy tale. That book gives it to you straight.
What's especially helpful is the discussion of some of the major pitfalls you'll encounter and how to handle them--which almost always have to do with dealing with clients.
The business and intellectual aspects of being a consultant are a cakewalk compared to the dealing with humans aspects.
Thanks, I love books like that. Gerry Weinberg's Secrets of Consulting is in that category for me.
These books are good:

But really, the best way is to network with consultants and pick their brains. A book isn't going to throw clients your way.
