Perhaps not what you’re after but my girlfriend and I have been making dishes from this book 80% of our meals for over a year. Can’t recommend it enough!

Vegan Under Pressure. It's not specifically for the IP, but I have the Pressure King Pro (the UK market leader) and everything I've made in my PKP from Vegan Under Pressure has been superb.

I've made a number of Kathy Hester's recipes. She has a ton of them available for free on her web site, Healthy Slow Cooking. Don't let the name fool you, she has all sorts of recipes, not just for slow cookers (the last one I made was this soup). In fact, she just wrote a new book about vegan air frying.
