I beg to differ, literally anytime Turkey is mentioned someone brings up the Armenian genocide, and I feel like anyone that uses this site can vouch for that.
Anyways, books on the population exchange.
The 1923 Greco-Turkish Population Exchange: Successful Prevention of Genocide and Mass Atrocites
Crossing the Aegean
Twice a Stranger: The Mass Expulsions that Forged Modern Greece and Turkey
The Greco-Turkish population exchange is entangled with the history of World War I, the League of nations, national self-determination, Woodrow Wilson's 14 points, the Young Turks movement, and a variety of other topics.
I have not read this book, but it may be a good starting point for you:
Crossing the Aegean, Renee Hirschon
https://www.jstor.org/stable/j.ctt1x76f3x
It looks fairly scholarly, but focused directly on the Greco-Turkish population exchange. Its likely that the Greek population of Cappadocia will be discussed in it.
Here is another one I have not read, focused on the population transfer:
Twice a Stranger: The Mass Expulsions that Forged Modern Greece and Turkey, Bruce Clark
https://www.amazon.com/Twice-Stranger-Expulsions-Forged-Modern/dp/0674032225

I have read these two books:
Byron's War: Romantic Rebellion, Greek Revolution
https://www.goodreads.com/book/show/17473168-byron-s-war
This book focuses on Byron's role in the conflict, but also gives good background info on the Ottoman rule over Greek populations.

Paradise Lost: The Destruction of Islam's City of Tolerance, Giles Milton
https://www.amazon.com/Paradise-Lost-Smyrna-Giles-Milton/dp/0465011195
This focuses on the war in over Smyrna/Izmir itself and also discusses the population transfer. I believe populations from areas such as Cappadocia are mentioned.

Another interesting book I have read that discusses the expulsions is:
Salonica, City of Ghosts, Mark Mazower
