I beg to differ, literally anytime Turkey is mentioned someone brings up the Armenian genocide, and I feel like anyone that uses this site can vouch for that.

Anyways, books on the population exchange.

The Greco-Turkish population exchange is entangled with the history of World War I, the League of nations, national self-determination, Woodrow Wilson's 14 points, the Young Turks movement, and a variety of other topics.

I have not read this book, but it may be a good starting point for you:

It looks fairly scholarly, but focused directly on the Greco-Turkish population exchange. Its likely that the Greek population of Cappadocia will be discussed in it.
