Ok, so a HUGE thing for me was missing chocolate, I'm not sure how far your sugar avoidance goes, but Walmart now has allergy friendly chocolate chips, even white! So there's that plus literally any fruit would be good.

Otherwise, I recently found this brand and it's an awesome "can't have junk" snack that actually tastes good

It's honestly super simple. The hardest part is probably making sure you don't add too much or too little water.

I'd get something like this (https://www.amazon.com/Instant-Tteokbokki-Popular-Korean-Snack/dp/B07GT3HCH3) and add some shredded cabbage and ramen noodles. The link I gave is overpriced and I've never tried that specific brand, but if I want to make it at home I just grab one of these instead of making it from scratch.

For a "lux" meal, you can also add kim-mari (http://www.heytheresia.com/2018/02/resepgimmari-kimmari-korean-deep-fried.html), have some mandu and kimbap on the side. But yeah, having this at a street stall is the best.

Nikkei here. The mochi ice cream was invented based off the daifuku and gyūhi popular in Nikkei wagashi shops. I found basically these (https://www.amazon.com/Sekero-rice-cake-Korean-Ovaletts/dp/B001AD8C2O ) rice cakes/medallions at an Asian grocery store the other day. My boyfriend and I think they would make amazing scallops with the right marinade. The texture is what we remember to be similar!

Are you talking about these mochi blocks? Like hard as a rock until cooked? If so Nijiya or Mitsuwa has them. I personally like to put them in a waffle iron to make mochi waffles and they are indeed crispy and chewy.

Whole Foods has thin rice cakes (suzies thin puffed rice cakes much cheaper in the actual store. ) at 57 calories for 3 rice cakes, I use Sonoma jacks light cheese wedge at 25 cal per wedge, usually 1 wedge for 2 cakes and 1/4 tsp everything but the bagel seasoning.
