You just need nori sheets, rice vinegar (I used this one ), rice, and your choice of veggies.

  • Cook 1 cup of rice and then combine with 2 tablespoons of the rice vinegar in a nonmetal bowl (I guess it can react to the vinegar, idk)

  • I then put the rice in the freezer to cool because you want it to be cool or room temp when you are assembling the roll

  • Chop all veggies into thin slices (about the size of a matchstick). I used avocado, carrot, and cucumber for the left roll, and cucumber and spinach for the right roll.

  • To assemble, wet hands and press about 2/3 a cup of cooled rice on to the nori sheet, so that it covers about 3/4 of the entire sheet. Then add a line of veggies to the end of the roll, and roll it all up. When your roll reaches the side without any rice, take some water and use it to smooth down the edge so that it sticks to the rest of the roll.

  • Cut into eight prices, and serve with soy sauce

Sorry if any of that was confusing, it’s hard to explain but pretty easy to do once you get the hang of it!

I've never made it without black vinegar, but I can't imagine it working out with any of those substitutes. You can just use Amazon though. Same for the dark soy sauce.

Honestly it's probably not worth it to make without those, I imagine it would be pretty disappointing. My mom always did that when I was a kid. "This recipe just isn't very good, I don't get it." but also "Well I didn't have x,y, or z, so I just substituted the closest thing I had."

How would you describe it? It’s... deeper? Think of the difference between a pale ale and a dark lager.

It’s very similar to akasu.
