Trader Joe's is cheaper than Amazon for me. Amazon's probably among the cheapest, though.

The recipe below is very versatile and can cover both sweet and savory snacks. You can make it into muffins or you can make it into a bread shape. My wife and I like to use it to make grilled cheese.

Recipe:

Melt 1 tablespoon butter (or other fat — sometimes I use coconut oil and my wife likes cream cheese) in a microwave safe container that is the shape that you want your bread/muffin to be in. (We like to use square Tupperware if we're using it for sandwich bread or a coffee mug to make it more of a muffin shape.)

Always Add:

  • 1 Tablespoon grated Parmesan cheese
  • 5 or 6 grinds of salt
  • 1/4 cup ground flax seed
  • Pinch of baking powder

    Optionally, also add (alone or in combination):

  • Garlic powder
  • Dill
  • Cinnamon
  • Sweetener (we like ezSweetz liquid sucralose because it doesn't contain filler like granular sucralose; filler = carbs)
  • Shredded cheddar
  • Pepper powder (chili, cayenne, etc.)

    Mix ingredients very well.

    Add one large egg and mix very, very well.

    Microwave approximately 1 minute or until the middle is firm.

    Serve with cheese, cream cheese, peanut butter, butter, or other keto-friendly toppings.

    My favorite combos are garlic/dill and cinnamon/liquid sucralose.

I like this stuff for sweetener - it's on sale at amazon for $6.99 and supposedly 300 servings/bottle, you might try it: EZ-Sweets debittered stevia

Be careful with the powdered sugar substitutes as you need to count them as about 1 carb/teaspoon. The liquid sweeteners like ez-sweets are carb free.

Raw cacao butter has been the best thing I've ever bought for PMS. If I'm feeling fancy I melt it down with cocoa powder and liquid stevia, if I'm feeling lazy (which let's be honest, is most of the time) I just weigh out a portion, add a drop or two of chocolate flavored liquid stevia, and let it slowly melt in my mouth. Amazing.

Also, chocolate flavored protein powder. I get /r/ketochow, and make a single serving every morning for breakfast with just powder & water, no cream (dairy makes me hungry, I try to minimize it).

Other than that I really like iron rich foods, I get a container of chicken livers the week before and work my way through a couple ounces a day. Soooo satisfying.

These are the little bottles that fit nicely in a pocket or purse. For me, one drop is sufficient to sweeten a 12-ounce cup of coffee. I carry a bottle everywhere I go and put it in all my unsweetened beverage. Best part, it’s carb-free cause it’s just sucralose without the fillers that come in those little powder packets (Splenda, the yellow packet, is the sweetener packet with sucralose). Score! 😊

I eat 2 meals a day with a light snack after work and another for dessert. I keep water near me at all times so it's always a short reach away.

For breakfast I go with 4 scrambled eggs (video) w/ No-Salt, 1 serving of sugar free jello, a glass of Stevia Kool-Aid and a generic multi-vitamin. Depending on the day's plans I might swap out the Kool-Aid for a whey protein drink instead. This leaves me very full and even with a workout around lunch time I won't feel hungry until at least 5pm.

My wife cooks supper, which will include various proteins, veggies, etc. as listed in OP's post above. Sometimes the meal plan will include more carbs than I prefer (such as a noodle dish) and she'll swap out the carbs in my portion for shirataki noodles instead. Last night I had a lovely baked spaghetti with meat sauce using these.

As for snacks I use pepperoni (fav is to nuke them so they're like crispy meat chips), sliced cheese, creamsicle jello, sugar free pudding (use half & half) and nuts (pistachios are my fav).

As for drive-thru, there's a Cook Out near me that still has their prices low (double cheeseburger for $1) and they'll gladly serve burgers without the bun and ketchup on the side. Also love Jimmy John's as they'll use a lettuce wrap instead of bread.

Congrats on your weight loss. I'm a type 2 diabetic who learned to look at sugar differently. I now count it as a carb, keeping in mind it's one carb that can spike my blood sugar up and down.

Baking is where I use sugar. I usually cut the amount by a third because using.the amount in the menu can be too sweet. Fruit purees also can be substituted in part for sugar. Sweet potato for example. I used a sweet potato puree for a dessert and had to eliminate most of the added sugar called for.

I also use pure stevia and have for years. Its volume is miniscule compared to sugar, but you can bake with it. You can buy the stevia products designed for baking, which are either part stevia/part sugar or stevia with a filler (inulin, maltodextrin). You can also buy pure stevia powder and mix your own sugar/stevia for baking. Stevia quality varies widely, I'm very picky about stevia quality, taste and price. This is the one I buy on Amazon.. I transfer it into a smaller shaker bottle originally purchased to test the product. You can see the savings in the larger size. Stevia does not spike blood sugar. Artificial sweeteners like Equal and Splenda do spike mine, and over time I had to use more to get the same sweetness.

The other sweetener I use is Agave syrup. It has a lower glycemic index than sugar. The raw syrup has a deeper sweet taste. I primarily use a 1/2 teaspoon in my tea to offset the higher sweetness of the stevia.

Honey has the same glycemic index as sugar, but many brands I find are sweeter than sugar. So maybe use less.

Ive heard of monkfruit but haven't tried it because of the price point. Xylotol upsets my stomach and causes heartburn.
Edited to add: I avoid products.with high fructose corn syrup.

These are great. And they are natural with stevia and you only need one little squirt. More than one squirt and it’s too sweet. I use a very big mug too. But they are easy to carry around. I keep them in my work bag.

In liquid Stevia, you have Stevia with an alcohol solution and the Stevia Glycerite is an alcohold free verstion.

Instead of coffee mate, try organic heavy whipping cream. That powder stuff has 2g carbs per tsp and that’ll add up quick if you need to use a lot. So, while the marscarpone balls were chilling in the fridge, I decided to make use of the leftover coating chocolate to cover some truffles.

Ingredients (and amazingly simple instructions):

  1. 3 Tbls cocoa powder
  2. 1 Tbls Coconut Oil
  3. 2 Tbls Peanut Butter (I use Skippy Natural cause it tastes the best)
  4. A few drops of no carb liquid sucralose (honestly, buy it) or powdered equivalent.

    Mix the cocoa and coconut oil with a fork until it is smooth and lump free. This takes a few minutes, but keep at it. When combined, add a big lump of peanut butter and the sweetener and mix like the devil. As long as the peanut butter is not cold, it will blend right in.

    Put in the freezer to harden a little (about 15 minutes), then take out, shape into balls and let harden in the fridge for about a half an hour. When hardened, simply roll around in the same chocolate coating as in the other recipe and refrigerate.

    I swear, they melt in your mouth and taste like amazing chocolate-peanut butter truffles.

There is so much difference! Many artificial sweeteners cause an insulin response that can lead to diabetes and weight gain. The best sweetener I have found is Stevia. But it can't be that fake imitation crap they sell in the stores(truvia, purevia, stivia, etc). I buy mine online. IT is like 20X more sweet than any other kind of sweetening agent and has zero calories and does not cause an "insuline response" or have any other known adverse health effects but it is important that you use whole stevia. I buy mine on http://www.buypurestevia.net or sometimes I go to http://www.amazon.com/gp/product/B00DSQZNF0. It is the same product either way.

Have you ever tried liquid stevia? They make it in like 16 flavors ranging from chocolate to strawberry. I personally really like adding coconut stevia and unsweetened coconut to my yogurt.

Taste is subjective, but I personally like sucralose and erythritol best--stevia in any form has a very distinctive taste that I dislike, and xylitol somehow manages to mimic a non-minty minty cool taste that I find weird.

You can get liquid sucralose super-cheap on Amazon in convenient little dropper bottles, and erythritol is available online and sometimes at Whole Foods and similar markets under the brands Swerve and Zero--both zero carb.

You have to watch out with powdered artificial sweeteners though, which use dextrose and maltodextrin to add bulk. Liquid sucralose is the way to go.

Truvia contains stevia w/ erythritol. I just dumped my splenda (which contains maltodextrin, a thickener that adds carbs) and bought some Truvia.
