It sounds like you're an awesome host. The bread is a great idea, and very thoughtful.

As for cross contamination if you don't want to worry about keeping a whole separate jar of peanut butter safe there are Justin's squeeze packs in regular peanut butter and various other nuts and flavors. I think stores like Whole Foods sell them individually too.

Also a lot of gluten free bread is much better toasted so it might be worth getting some toaster bags for your cousin to use. I've never used them before but my nutritionist recommended them.

I guess this advice pretty much hinges on how much your guest likes peanut butter, but PB sandwiches (or sadwiches, as I call them) are pretty much my go to food when I have to carry food around with me and I've had enough Kind bars.

Hmm, that is certainly a hurdle for changing your diet. Are you comfortable cooking things in a microwave with simple instructions or multiple steps? If so, I'll come back and edit with some recipes. There are bound to be some raw/low effort vegan dishes to accommodate you!

Glad you're feeling better! As for your toast issue, they make toaster safe bags you can put your bread in to protect it from the toaster gluten. Lots of people travel with these! Well you can pretty much make anything from any cookbook just be sure to double, triple and quadruple check the ingredients your using. Most jib oils, pan sprays contain soybean oil which is a big red flag for those with soy allergies.

They make toastabags which allow you to send gluten free breads through a traditional toaster.

Some old folks need their food cut up real small and have hands that are too shaky to do themselves, wait staff can do that or depending on whether you use a rational/sham type pre-plated setting can do that ahead of time for em or do it at service time.

I'm going to go out on a limb, here, but this Mitsubishi BO-R65JB-R is apparently "Made in Japan," if you wanted to try something different. It has very good reviews on Amazon Japan and Rakuten, and it's very simple to use--the top knob is temperature (celsius), and the bottom knob is timer (minutes).

There are lots of racks for 1/4 sheet pans, but I have not found one for an 1/8 pan. There are racks for steam table pans. A rack for a 1/4 size steam table pan is a little bit smaller at 4.25 by 8.25 inches, but it might work for you. Here is an example:

Toaster oven pans are close to the size of 1/8 pans, but racks for them will not fit. You could just get a toaster oven pan with a rack.

I was lucky and got this model NIB off craigslist for $40 so I can now toast various flat breads (some I trim or halve first), large bakery fresh rolls, bagels, challah, and those large artisan bread slices.
