I personally don't believe in literal seven day creation, for many of the reasons you mentioned. One notable thing is that the word usually translated "day" in the first chapter of Genesis can also mean "indeterminate period of time" in the Hebrew. Additionally, the language in Genesis 1 is similar to other poetic language in the Bible, hence the metaphor theory (though I wouldn't call it a metaphor, since it's not really a comparison). I however, believe that the part about the fall in Genesis Chapter 3 is literal. As you said, one has to in order for the Biblical narrative to make sense, but I don't think chapters 1 and 2 need to be literal in order for the Biblical story to make sense. It's not the most elegant theory and obviously open to debate, but it makes the most sense to me. I'm open to changing my view if evidence points a different way.
I personally cannot ignore what I have seen God do in my life and the lives of those around me. I can ask God what he wants me to write here, and he answers me. Maybe you think I'm insane, but I don't. That's why I trust in Jesus even if I don't understand everything about how it works.
A good book on a Biblically based old earth creationism theory, using fairly solid scientific reasoning is Creation As Science by Hugh Ross, if you're interested.
