While that may be true to an extent with Jamie Oliver, Anjum really bastardises a lot of Indian dishes by over simplifying them and even trying to merge then with western equivalents. I'm not a fan of hers at all.

For a slightly less heavyweight introduction (to specifically Indian curry), I highly recommend this book by Camellia Panjabi. It's a selection of (only) 50 recipes, but it's got a great introductory section talking about the different basic techniques and ingredients, plus titbits about the regions/cuisine of India and the religious/cultural background to the food. I've been slowly making my way through the recipes for a few years now and I've yet to have a real flop from it

Very hard to summarise the food of an entire continent. There is a huge difference between Murghal cuisine and Bengali food for instance. Besides, Escoffier isn't really a repository of European cooking. He was updating Careme's recipes and techniques for haute cuisine. It was hotel food, designed for the burgeoning upper middle classes as opposed to the landed gentry and their kitchen gardens, and served ala Russe, as opposed to ala Francais.
A simili in Indian food might be Hyderabadi cuisine. It is the food of the Murghal emperors, adapted and popularised in local kitchens. I don't know of any books though.
There are however books that teach how to make some specific dishes in an authentic way.
