Here is a screw-on fisheye attachment that will fit on a kit lens, is cost-effective, and will probably have a nice lo-fi look.
And Here is a lens, pretty cost-effective as lenses go, and may have better build and image quality.

The closest I've come to a fisheye on my t3i is Canon's 10-22, and I love it.

Looks like its a fish-eye adapter on top of a regular lens, like one of these. Dont work as well but cheap for people who dont want to spend $500+ on a very niche lens.

Slik pro 700 dx tripod I love using this tripod, a bit heavy though, for brand new off their website is 100$, used is cheaper. Tell wife that without it, will get shaky pictures. Same with monopod, but easier for hiking.://www.bhphotovideo.com/c/product/687347-REG/Oben_CTM_2500_CTM_2500_5_Section_Carbon_Fiber.html

Nd filter and polarizing, tulip cover, uv filter, tell her without these, lens will dirty, taking pictures with bright sunlight will streak and ruin photo.

I use it, cheap, but ok quality, pretty good photos, just find the right mount. Tell wife if dont have, cant capture entire landscape.

Good luck with ur wife!

Also , what gear do you have/use?

I was really more so looking for an attachment like this http://www.amazon.com/gp/aw/d/B008YFXNE8/ref=mp_s_a_1_10?qid=1406077634&sr=8-10&pi=AC_SX110_SY165_QL70

However I'm not sure if these are manual focus or if they are even worth the money
