  1. Some fish have metalic layers that only show in certain lighting (flashes). That may be what you are seeing in terms of the coloration. The gold along his back makes me think it is just his metalic layer. The other possibility is Velvet (https://www.google.com/search?q=betta+velvet&source=lnms&tbm=isch&sa=X&ved=0ahUKEwiJlNeoioTUAhVCwlQKHfCBCrMQ_AUICygC&biw=1578&bih=909) but again, it looks like he has a metalic layer and that could be it.

  2. Definitely not jumping on you here :). Heaters are still useful when you live in a warm climate. As long as the thermostat is is functioning correctly, it will successfully keep the tank in a much tighter range temperature-wise. As opposed to seeing nearly 4 or 5 degrees of fluctuation through the day/night cycle a decent heater (~$15.00) will usually manage to keep it within 2 to 3 degrees. If you are only seeing the odd behavior at a certain time of day that leads me to believe that he is responding to the temperature fluctuation. The heater simply turns itself off once your tank is at the correct temperature. It will not fry your fish :). These are the ones I really like and find extremely reliable: https://www.amazon.com/Aquarium-Submersible-150-Watt-Vertical-Thermometer/dp/B06XPW62PF/ref=sr_1_3?srs=3306424011&ie=UTF8&qid=1495476852&sr=8-3&keywords=aquatop+heater

  3. As soon as you can, invest in an API Master Freshwater Test Kit. As a casual hobbyist it will last you years and it will give you a MUCH better idea of what could be causing him stress.
