So I tried this recipe. I made it with elbow macaroni and didn't dump quite so much sauce on the pasta, but otherwise I followed the recipe to a tee.
It definitely needed more salt. I don't know if OPs cashews were salted, but mine weren't and I added an extra 1/2 teaspoon where it said "pinch salt (to taste)" and that made a massive difference.
The basil "garnish" is also kinda required. It just didn't taste the same without it but sprinkling some on made a huge difference.
It still left a bit to be desired until I put a few dashes of my favorite Bajan Pepper Sauce on top. That made it a meal! To be fair, I'd do the same with regular mac and cheese as well. I never liked it plain.
All in all, I'll make this again. Definitely a keeper.
