I've posted on here many times about how great enzymatic cleaners are. That's what you need to use or you risk the vomit smell coming back.
I've used Enzym D and it's amazing stuff. Vomit is an organic substance so you need something to break it down to completely rid the smell, especially in something like seats.
I used it in a basement where there were 5 cats, a couple of which were peeing and pooping wherever they pleased on the concrete slab. It was disgusting. I used the Enzym D full strength and brought in an outside nose and they didn't smell a damn thing.
I also used it the one and only time I had a vomiter while driving.
Use the enzymatic cleaner on the floor mat, and a shop vac or something similar to suck out the cleaner. I have this bad boy I bought for my couches, but works equally as well on car seats and carpets.
As for the speaker grilles - like /u/zombiezambonidriver said see if you can find a video on how to remove the paneling for your speaker. Shouldn't be too hard. --edit: apparently it might be lol

Oh I wanted to seriously say that if you think the funk is in your seats, try an enzymatic cleaner. I've used Big D Enzym D with fantastic results cleaning cat urine from concrete (which is an extremely porous material).

Spray your seats with it, let it sit for a bit, and turn on your car's heater to dehumidify and dry the seats.
