Ask the barber to use scissors instead of the clippers on top so it's not "fuzzy" and it can be a little more "choppy" because my hair is the exact same way if I ever used the clippers on top. Also I'm a big fan of Blind Barber's 90 proof pomade.
I use the 90 Proof Blind Barber. Pretty strong hold but pliable. You can find it on amazon :)

Blind Barber
I wouldn't go with gel for your hair. Gel and thick hair just don't mesh. I have thicker hair and I'm a huge fan of Gatsby clay. No shine, nice hold. Adds great texture.
I'd also recommend checking out some pomade. Some Blind Barber would let you slick it back and have a lot of control over it.
For the length of the fade, check out the pics above and see what you like. I think the third pic might work well. It's really up to you though. You could just not get a fade. It would look good either way.
Either way, I'd say try out some pomade or clay before you decide to get it cut.
