Just to complicate things a bit more: BlackVue 1CH dash cams can not be upgraded to 2 CH. They will lack the rear camera port, as the 1CH dash cams are physically different than the 2CH versions.
Thinkware dash cams which have 1CH/2CH versions can be upgraded from 1 CH -> 2CH.
Look around for the best price. - Standard copy pasta.

Did probably too much research. Decided on a Blueskysea Mini 0906. Rear camera, capacitor operated, Sony cameras. Picked up from Amazon US for $188 USD including front and back hardwire kits and a 64GB card. ($310 Canadian for just the camera on Amazon. CA) Wishing us both luck.

Nah man it's just 2 cables. One runs to your 12v (the cigarette lighter thing) and the other wire you run to the back of the car, the wire connects to the rear camera. (This method only records when the car is on)

Instead of connecting to your 12v it connects to your fuse box inside the car so now it's powered by the battery 24/7. My car has this method and I've had it record for 3-4 days without driving and my car started up fine. It'll also turn itself off when it realizes it's been draining the battery for too long.
Due to extreme hot weather, it is recommended you get a Capacitor dashcam.

It’s the Mini 0906 there was a sale and I got it for like 30$ off.
Simple. You want a dual camera setup. You can get this one for $130, and it looks like you must power it by a "cigarette lighter" outlet. Although you may be able to cut and separate the wires, or get yourself a hardwiring kit to connect it to your car's fuse box.
This is the one that I got, and I'm very happy with it. It is $430, but is a "flagship" camera and it shouldn't give you any trouble. It's a solid dashcam that can't really be beat right now. It has a "cigarette lighter" cord, as well as a hardwiring kit that allows you to wire it to your car's fuse box. Just search YouTube for how to hardwire a dashcam for your car's make and model.
This is $460 instead of $430, and has some sort of cloud connection that will alert you if your car leaves a certain radius from its parking space. Seems potentially useful, but maybe a cheap gimmick.
The Mini 0906 is one of the cheaper dual true 1080p dash cams and video quality is decent. It hasn't been out on the market a long time so longevity is unknown but initial reliability reports are good.
I generally recommend using two separate cameras that way if one fails the other will likely still be recording. It's also easier on the memory card. I'm personally using a Viofo A119 front facing and A119S rear facing so I've got 1440+1080p.
Since you need it for cold and hot weather avoid any camera based on a battery. Capacitor cams are usually far more reliable in harsh conditions.
Make sure you get good high endurance memory cards too because a lot of failures like you mentioned are the card.
So called parking mode will require a little bit of wiring work (key off usually kills power to the car outlets), but some guys get around that with a power bank. It's also marketed as a premium feature so most likely included on the more high end ones like the BlackVue.
That said the mini 0906 seems to hit all the right options: front and rear camera, small profile, parking mode, HD recording, and parking mode. Note that the wiring adapter needed for the 24/7 parking mode is not included in that Amazon link.
