I had https://www.amazon.co.uk/Cello-Time-Joggers-CD-pieces/dp/0193220873 and Piatti. We only skipped through (i.e. one or two lessons) Cello Time Joggers and went to Cello Time Runners and Suzuki 2 (I had had lessons when I was younger though). There's probably more suitable books than Piatti, though.
If you say she can already read music and play another instrument, I don't know why Suzuki book 1 would be for much later. If anything, you will be able to go to book 2 very quickly or skip straight to 2 after a few weeks
I do recommend 'Cello Time Joggers' and 'Runners' but they are are pieces and not methods.
