Voltage depends on battery chemistry. NiMH will always be 1.2v nominal (i.e. 0.9~1.4v) per cell, so swapping them for modern rechargeable-NiMH's like Eneloops isn't a problem. Plus, even though the two cells in the pack are in series, 2.4v is very low for an audio/RF circuit, so its probably regulated by a dc-dc boost converter which usually come with a wide input-voltage range.

Yep. mAh is the indication for capacity, it doesn't actually say anything about the maximum current you can draw from a cell (that is indicated as its "C-rating"). Any non-trivial* electronics design will have a self-regulated current draw, so in the same way a computer won't suddenly pull 1000 Watt when you upgrade it's power-supply from a 300 Watt model, having batteries with higher C-rating or bigger capacity won't do any harm.

* With trivial I mean, for example, a red LED stuck on a 3.3v coin cell, which relies on the (high) internal resistance of the battery to limit its current to ~25mA. Using the same LED with 2 AA Alkalines in series (3v) would fry the LED, probably instantly.

If you are going with a 6 card setup, the H81 is the way to go.

Also the Corsair 1000 watt PSU will hold 6 270's without any issues. The CPU is just the cheapest available, as for a mining rig CPU doesnt really do anything but support the operating system.

You will need risers for all the cards yes. Link on sidebar for good USB3 ones. Dont go ribbon anymore, thats more prone to issues.

It looks pretty close. The PSU is a 80+ bronze so ~80%+ efficiency meaning it might not actually give you 750w I would go for an 850 because running that close to max is going to create more heat and noise

I have almost that exact setup(4 msi r9 270s & 2 saphire r9 270s), however I have undervolted my cards and am getting away with this 1000 watt psu. So far I have not had any problems, however it probably would have been wise to get a 1200 watt.

Whoa, I haven't heard of EVGA shipping defective items. Make sure you return it, where did you buy it from? Amazon looks to be $5 cheaper than Newegg.

I bought Corsair RM1000 for $168.98 from Amazon the other day. The cable management pales in comparison to the EVGA version, but it was a great price.
