You can get freeze-dried fruits in many places. https://www.amazon.com/Crispy-Green-Freeze-Dried-Non-GMO-Packaging/dp/B00F6MFXCW is one example.

Chocolate lasts a long time -- it'll develop a white frost on it if it's stored cold, but you just rub that off and it's good as new.

You can make a decent mug of hot chocolate with hot water, cocoa powder, and some sweetened condensed milk.

If you snack anyways, IMO it's best to just start buying your snacks a month before you were going to eat them. Maybe portion a given amount of each snack each week from a bulk bag to a smaller serving jar if you have problems with eating the entirety of a snack in a hurry when it's supposed to be for storage.
