Maybe this might be a good fit for you. This desktop has solid reviews as a workstation and they will assemble it all for you. They have different options but I'd probably go with the one for $2,400. You can add extra storage in the checkout as well if you need it. I'd probably order the monitors and keyboard/mouse separately on amazon or something to get a better deal.

For your monitors, I'd go with 2 of these from dell on amazon. They have good color accuracy for video editing and are $268 a piece.
