There are a ton of interesting art materials (I know, my wife buys them all).

If she likes pencil, maybe watercolor pencil would be interesting. You can draw like with a normal color pencil but then you can wet it and move and blend the colors around the page.

You need to get some heavier water color paper to take the abuse but it can do some amazing things in the right hands (not mine).
